In an extraordinary collaboration with Michelin-starred Chef Jason Tan,
LEGACY presents a bak kwa conceived at the highest altar of craft and culinary imagination.
Chef Jason’s iconic Cevennes onions revered for their gentle sweetness and aristocratic pedigree, are taken to the edge of transformation. They are slow-grilled, charred, and awakened over the intense purity of Wakayama Kishu binchōtan, the legendary charcoal favoured by Japanese masters. In that moment of deliberate burn, their sugars deepen, their fragrance darkens, and a smoky, caramelised soul emerges.
These fire-kissed onions are then woven into a finely crafted blend of pork, meticulously selected from specific regions across the globe, each chosen for its distinct character, its texture, its ability to carry flavour with elegance.
What arises is not bak kwa as the world knows it, but a statement of gastronomic drama, layered, compelling, and unapologetically luxurious.
